Healthy Tips if you cook.

Corn is in season. The best and sweet, " Salt and Pepper" called for the white and yellow kernels on the cob.

Corn stock

To make corn stock to use on your soup, or other preparations as a delicious base, simply, simmer cobs with thyme, onion, bay leaf and just enough water to cover.
Simmer slow for 10 minutes and strain.

Cantaloupe is also in season

Cut chunks of cantaloupe  and blend with lime juice with a pinch of salt and pepper flakes until smooth. Stir well and serve.

Forest tomato sauce for pasta

Skin and seed tomatoes into a colander over a bowl to catch their liquid.
Chop fresh tomatoes add Basil, parsley, and chopped garlic and the tomato juice and serve over pasta

Black Bean Burguer


Explosion of taste.

Black beans, chopped Brocoli Rabe or spinach, chopped roasted red peppers, shallots, chopped,garlic bread crumbs to bind. Baby greens, Cherry tomatoes and avocado purée complete the symphony.
The maestros are Balsamic  Vinaigrette and Flax Seed Oil.

Cauliflower soup with Balsamic Red Onions and Wilted lettuce

3 cups chopped cauliflower
1/4 cup extra virgin Olive oil or water
2 tablespoons red wine vinegar
1  1/4 cup filtered water
Himalayan Pink Salt

In a high blender, combine the cauliflower, Olive oil, vinegar, and water and process until smooth and a thick sauce like consistency.
Pass through a medium mesh sieve. Season to taste with salt and pepper.

Balsamic Red Onions

1 small red Onion, sliced thin
1/4 cup balsamic vinegar
 1  1/2 teaspoon extra virgin Olive oil
Pink salt

Marinate the onions with Balsamic and Olive oil or only balsamic and salt

Lettuce

8 Bibb Letuce leaves torn into 2 inch pieces
1 tablespoon balsamic vinegar

Combine with balsamic vinegar

Assembly

Ladle the soup into a bowl.
Arrange some pieces of lettuce and marinated red onion  around the bowl.
Spoon some of the reserved onion marinated juices around the onion and lettuce.

Enjoy.

Black Bean Soup with Avocado Salad


Soak black beans overnight if you use the dried beans otherwise you can use the canned which works perfectly well.

You need:

Black beans,  red onion, chopped, red pepper , chopped,  celery, chopped cumin powder if you like it, salt and pepper and for garnish you need avocado purée seasoning with lime juice, shredded carrots and sliced Cherry tomatoes as well as sliced Scallions

Cook the beans  with the vegetables bean cooking water and more water if necessary.
Cook until all is soft.
Take it to the blender and purée in batches. To make the soup smoother pass it through a fine sieve. If the fiber from the bean skins are important for skip the last step.
 Check the seasonings.

Ladle the soup into a plate and spoon a tablespoon of avocado purée  in the center.
Top with shredded carrots, sliced Cherry tomatoes and sliced scallion.

Serve the soup warm or cold.

Enjoy.

Quinoa, Avocado Salad

2 cups cooked Quinoa
1 tomato diced
1 red pepper, diced
1 yellow pepper, diced
1/4 cup cilantro, minced
1 tablespoon cumin seeds
Juice of 1 lemon
2 tablespoon Olive oil
Sea salt
1/4 teaspoon red pepper flakes
pinch of cayenne
1 cup avocado Creme fraiche

Toss all ingredientes toleteira except the Avocado creme fraiche
Allow to marinate 10 minutes before serving.

Avocado Creme fraiche

3 avocados, peeled and pitted
Juice of 1 lemon
1 tablespoon Olive oil
1/2 tablespoon of miso
1/2  Tablespoon apple cider vinegar
1 date
Water
Salt

Blend all ingredients until smooth

To prepare the dressing and get the colors, just use the same ingredients for both. use Spirulina or Turmeric for color and flavor

Spirulina salad Dressing / Turmeric

1tbsp Spirilina / Turmeric
8 ounces cold pressed extra virgin Olive oil
4 ounces fresh lemon juice
1tablespoon miso paste
1teaspoon stone ground mustard
1 clove garlic
1teaspoon agave nectar
1dadh cayenne pepper
1 green onion

Blend well and chill until ready for use. This dressing will keep 10 days in the refrigerator
